ran out of sausage!
Took a year but we finally ran out of sausage and all things pork from our 220 lb hog. This weekend Roger, Taylor and Juan got another. This one was a 140 lb boar. I was worried about the "gamey" taste of a boar vs a barrow (previously castrated boar) or a female so I processed a small amount of sausage last night and this morning was the first taste test. He's quite yummy! Now I'm not sure if it's my bad ass seasoning skills, if gamey meat just doesn't bother me or if he just didn't happen to be all that gamey since he's a much smaller hog. Whatever the case I'm a happy gal.
Taylor pictured here with Roger and the hog. I love that picture. Looks like all three of them are smiling (hog included) but the hog is quite dead already. A big thank you to Juan for the pictures. Wayne showed up just time to help with the gutting. I think that might earn him some sausage! I got to do all the skinning once Roger got him back to the house. I'll take skinning over gutting every time!! *I'm laughing in the picture because Roger, right before he snapped the shot, said "nice cleavage". MEN!
